Chocolate Eclair 3 small boxes Instant Vanilla Pudding (I use Zero sugar) 4 1/2 cups Milk 1 box Graham Crackers 1 tub (8oz.) Cool Whip (I use ‘Lite’ or sugar free) 1 container Chocolate Icing 1. How I made Pan Eclair: Make a large box of vanilla pudding per the instructions. Once set, fold in a regular size container of cool whip. Layer with Graham crackers. Topping: 1/2 cup sugar, 1/4 cup milk, 1/4 cup cocoa powder. Stir together till bubbly, then add a handful of chocolate chips and 5 tbsp butter.
