When concentrated sulphuric acid is added to sugar, it rapidly removes water molecules from the sugar in a strong dehydration reaction. Sugar contains carbon, hydrogen, and oxygen, and when the acid pulls out the water (H₂O), only black carbon is left behind. The reaction releases a lot of heat, making it highly exothermic, so the black carbon expands and rises like hot foam.
